Independence Day in Paraguay is observed every May 14 and 15, celebrating the country's declaration of independence from Spain on May 14, 1811, following a bloodless revolution led by José Gaspar Rodríguez de Francia. The festivities include parades, concerts, fireworks, barbecues, picnics, and street parties, with the most vibrant celebrations taking place in Asunción, the capital. Participants often wear traditional clothing and enjoy local dishes, notably sopa paraguaya, a spongy cake made from corn flour, cheese, and milk. The second day of the celebrations, May 15, is also recognized as Mother's Day, honoring Juana María de Lara's contributions to Paraguay's independence. Despite the initial declaration, it took Paraguay three decades to gain international recognition of its independence.
