National Undhiyu Day is observed in the Indian state of Gujarat every January 14. This day celebrates undhiyu, a mixed vegetable dish that is a regional specialty of South Gujarat, particularly originating from the city of Surat. The name "undhiyu" translates to "upside down" in Gujarati, reflecting the traditional cooking method where the dish is prepared in earthen pots placed in the ground and cooked over a fire. Undhiyu is typically made with seasonal winter vegetables, including green beans, baby eggplants, unripe bananas, purple yam, and muthia. While traditional cooking methods are less common today, the modern approach involves slow-cooking the spiced vegetables until they are dry and slightly crunchy. A variation known as surti undhiyu, often served at weddings, features red lentils and is garnished with toasted coconut and peanuts. People outside of Gujarat can also participate in National Undhiyu Day by trying to cook this dish themselves.
